Curriculum:
  (1) Basic western cooking theory, kitchen brigade,
recipe learning and basic safety and hygiene

(2) Use of tools and equipment in western kitchen,
different cuts of vegetables, the introduction of
basic stock and sauces

(3) Cream of carrot soup
Carrot and cheese sandwich

(4) Chicken and mushroom veloute soup
Chicken caesar salad

(5) Asparagus with Hollandaise sauce
Coq au vin

(6) Poached sole fish fillet with dill sauce
Pan-fried fish fillet (Sole meuniere)

(7) Shrimp cocktail
Roast spring chicken served with croquette potato

(8) Handmade pasta with Bolognese sauce
Cheese risotto

(9) Egg en cocotte
Roast pork (butt) with gravy and gratinated potato

(10) Iceland lamb soup
Roast rack of lamb with herb crust

Entry Requirements:
 

  • Completion of Secondary 5 in HKCEE or Secondary 6 in DSE or equivalent, OR

  • Completion of Secondary 3 or equivalent and passing the admission interview conducted in English; AND

  • At least 18 years of age.

Aim & Objectives:
  This programme is designed to equip learners with the practical knowledge to produce western starter and main course items.
Award & Assessment:
  • Achieve 75% attendance or above in the programme; and
• Achieve overall marks 50% or above for all assessmentsc.


Students will be notified within three months after the completion of the course, to collect the certificate.

3) If any student is found in acts of vandalism or misuse of equipment and utensils, he/she shall be liable to compensate the School for any losses incurred.
4) No photo-taking or video recording is allowed during lessons without prior written approval from the School.
5) Students should always wear face masks during lesson or in school premises.
